Now that the kids are back in school, I'm getting back on track. NO more last minute trips to the grocery store to grab stuff to make dinner.
I put together a menu plan for the week along with a grocery list. I'm off to get that done this morning.
I pulled out an old recipe we haven't had in ages to try. It's a family fav!
Spaghetti Bolognese
1 cup canned tomatoes
2tbsp butter
1/2 tbsp olive oil
1 oz. pancetta
1 small onion finely chopped
1 small celery stalk finely chopped
1 small carrot finely chopped
1 tbsp chopped fresh parsley
6 oz lean ground beef
3 oz ground pork
1 oz moradella finely chopped
salt to taste
1/3 cup dry white wine
1/3 cup milk
pinch of nutmeg
2 tbsp tomato paste
2/3 cup beef broth
spaghetti
parmesan cheese
fresh ground pepper
In a large heavy pot melt 1 1/2 tbsp butter along with the olive oil. Stir in the pancetta and saute until lightly browned.
Add the onion, celery, carrot and parsley and cook until softened but not browned. Keep the heat low and add in the groud meat and mortadella. salt. Brown the meat using a wooden spoon to break up the chunks.
Pour in the wine, simmer very gently about 3 minutes while the alcohol evaporates.
Add the milk and nutmeg simmer for another 10 minutes, add in the tomatoe paste dissolved in 1/4 cup beef broth along with the canned tomatoes. Cover partially and simmer for at least 4 hours. Add remaining beef broth as the sauce cooks.
finally when the sauce is thick and creamy add in the remaining butter and the pepper.
cook the pasta, toast a bit of garlic bread, toss a salad and dinner is ready!

Back to School
The kids all started school this week and I think we're finally getting into a routine again.
Between bus schedules, home work, packing lunches, checking school folders, signing all those school forms.....it's been a busy week.
My kids love to take a home lunch and I must say I'm so glad they like to pack the lunches themselves. I do need to do a bit of planning so that it's easier for them to put a good lunch together each morning.
My kids all love sandwiches, soup, salads, carrots, fruit, crackers and cheese, yogurt, pudding. My plan for the next couple weeks it to get a system in place where I have all those types of things readily available for them to put into a lunch for the day.

Woo Hoo more progress made today!
We bought the comforter and a cute pillow she had picked out...Touched up the last bit of painting and we're starting to put it all back together!
Now to decorate. I'm already designing a couple new decals just for her room. We have a full list of decorating "to do's" left on the list but day by day it's coming together.

Fun and funky new room!!!
We made a bit of progress today on Mack's fun and funky new room. After MANY trips to home depot and lowes looking at paint chips we finally settled on the perfect color combo!!!
It's from the ralph lauren collection called Island Brights.
We chose Limeade Green and Racer Pink.
If things continue to go well, we should be able to wrap up painting tomorrow. It will feel so good to cross that off the "to do" list. Then it's on to the fun part of getting it all put back together and decorated.

It's time to get organized
With school just around the corner it's time to wrap up the summer with some good time saving organizing.
To help with this, designer Erin Vale has designed a collection of great list making tools. I'm personally going to print her "Freaking never ending to do list" and make it into a note pad.
To do this project..
Print the sheets and cut them down to size. Once this is done you can add a sheet of stiff cardstock or the back of an old notebook. Clip this to the back side using large those large black office clips. Once everything is clipped tightly together, just paint tacky glue along one edge. Once it dries you'll have a cute little customized note pad.

Our Project is Complete
We just wrapped up the project we started on the long 4th of July weekend. The entertainment center has no been customized to fit and looks great! I'm so pleased with how it turned out. I must say it was alot of work and my husband did an incredible job! The room color is really washed out in the photo, the walls are a much darker shade called coffee.

Picking a new paint color
We are slowly pulling Mackenzie's room together and I'm finally ready to take on painting the walls. I've got paint swatches EVERYWHERE. Her room is pictured here, the other furniture in her room in white with a hot pink, black and white shelving set. So any advice on a wall color? We are mainly working around the color scheme of her hot pink sheets and lime green bedcover and hot pink lamp. Although this winter we talked about adding a black and white comforter to the bed for warmth. She has a cute one from Target picked out.
Any advice? I've got paint swatches from lime green to apple green, pinks in all shades.
