I grew up eating fluffy taco's at a local mexican restaurant. After leaving home and moving away it's one of the things I miss about my home town, it's one of our first stops whenever we go home to visit. But I've found a recipe that turned out fabulous and reminded all of us of the el comedor's fluffy taco's.
FLUFFY TACOS
3 cups corn masa mix
1 1/2 tsp salt
2 1/4 cups warm water
Fill with your favorite taco fillings
Combine masa, salt and warm water in a large mixing bowl and mix until a smooth dough ball forms. Pull off pieces of dough and roll into balls about the size of a pingpong ball.
Cut a quart-size plastic bag open on both sides to form a rectangle. Use the bag as you shape the tortillas so they don't stick. Lay one side of the plastic on a clean countertop. Place a ball of dough in the center and fold teh plastic over. Press out teh tortilla with a heavy skillet.
Meanwhile pour 2 inches of oil into a large deep pot and heat to 350 degrees. Drop the tortilla into the oil and using a metal spatula, repeatedly douse the torilla with hot oil until it begins to puff up. Flip it over and using the spatula, make the indentation in the center of the tortilla to form a taco shape. Transfer to paper towels to drain. Repeat with remaining tortillas.
Fill with your favorite taco meat and top with shredded lettuce, cheese and diced tomato.

Looking for the perfect room to place our new Decal
I went ahead and listed our newest monogram decal in the store. I will hopefully get a few better pics of it in the next day or so. But for now it's bedtime and these shots will have to do. It's time to tuck my little ones in bed for the night and enjoy just a few minutes of quiet with my hubby before we fall asleep and find ourselves up and running full speed again in the morning.
